With all this fabulous fungi popping up we have been learning all about fungi here at Eco Explorers!
Last week our Bush Kids & Forest School children made delicious fungi pizzas which were actually a big hit so we wanted to share this simple recipe with you.
Ingredients:
- 12 mini portobello mushroom
- mozzarella cheese
- capsicum or cherry tomatoes
- olive oil to drizzle
- basil
Directions:
- remove stem from the mushrooms
- chop up capsicum into small pieces
- add capsicum onto mushroom and drizzle olive oil
- sprinkle cheese and add basil
- wrap in foil
Cook over a fire or in an oven, saucepan or even with some baking paper on an outdoor BBQ.
You can make so different versions of these as well, with or without cheese. The kids loved making and eating them and it was a great addition to our fungi learning week.
